A Custom Flour Blend We Make Ourselves
We don't use store-bought GF flour. We make our own blend based on America's Test Kitchen's extensively tested formula: white rice flour, brown rice flour, potato starch, tapioca starch, and nonfat milk powder. ATK tested over 1,000 batches to perfect this ratio. The milk powder adds protein for better structure and browning. The dual starches create chew without grittiness. The result? Cookies that taste like cookies.

Gluten-free shouldn't mean "less than" Our Farmhouse cookies use the exact same Kerrygold butter and pasture-raised eggs as our signature chocolate chip bars. The only thing we removed was the wheat.

The Science Behind the Chew

Most GF cookies fail because they try to just swap flour 1:1. That doesn't work. America's Test Kitchen discovered that GF flour needs:

  • Less butter (GF flour can't absorb as much fat)
  • A splash of milk (helps the starches hydrate)
  • 30 minutes of rest time (lets starches soften, sugar dissolve)
  • Melted butter instead of creamed (less air = more chew)
  • Xanthan gum for structure

We follow all of it. That's why these work.

The Gluten-Free Reality

These are made with 100% gluten-free ingredients. We bake all Farmhouse Collection products FIRST every bake day—before any wheat flour enters the kitchen—to minimize cross-contamination risk.

Important: We are not a dedicated gluten-free facility. Our kitchen also produces wheat-based products. While we take precautions, this means our GF products are not safe for those with celiac disease or severe gluten allergies. If you have celiac, please don't risk it.

For those with gluten sensitivity or who avoid gluten by choice, these are made with care and intention. Most people can't tell they're gluten-free. That's the whole point.

Our custom flour blend costs more than wheat flour—and more than cheap store-bought GF blends. We refuse to cut corners on butter or eggs to make up the difference.
